Banana Pecan Chocolate Chip Loaf
Ingredients
- 3/4 cup regular or gluten free flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 medium mashed ripe banana
- 1/3 cup light brown sugar
- 1/2 cup milk
- 1/3 cup cooking oil
- 1 egg
- 1/2 teaspoon vanilla
- 1/3 cup chopped pecans
- 1/3 cup mini semi sweet chocolate chips
Directions
- In a medium mixing bowl add mashed banana and egg, beat together with fork.
- Add light brown sugar, cooking oil, vanilla, and milk, blend together completely.
- Add flour, baking powder, and baking soda, blend everything together.
- Stir in chopped pecans and mini chocolate chips.
- Spray a 9×5 loaf pan with cooking spray.
- Pour batter into loaf pan, spread evenly.
- Bake in a pre heated 350° oven for about 35-40 minutes.
- Place on a cooling rack to cool. Can be left in pan or taken out to slice.
- Serve warm or completely cooled. Enjoy!
