Chicken Spinach Rice Bake
Ingredients
- 1/2 pound boneless chicken breast, cut into small pieces
- 2 tablespoons olive oil
- 1 & 1/2 cups milk
- 1/3 cup grated parmesan cheese
- 4 ounces cream cheese, cut into cubes
- 1 cup shredded mozzarella cheese
- 1 tablespoon umami mushroom seasoning, or you favorite seasoning blend
- 2 teaspoons paprika
- 2 teaspoon onion powder
- 1 teaspoon garlic powder
- 8 ounces frozen spinach (squeeze out liquid if needed)
- 2 cups cooked rice
- salt and pepper to taste
Directions
- In a large skillet on medium heat add olive oil and chicken, cook until opaque, a few minutes.
- Turn heat down to low, add milk, stir in parmesan cheese and cream cheese, stir until melted. Mix in the spinach.
- Add all the seasonings, stir in the cooked rice, add half of the mozzarella cheese and stir until combined.
- Pour everything into a medium casserole dish, top with the remaining mozzarella cheese, cover with foil.
- Bake in preheated 350° oven for about 30 minutes. Serves about 3-4. Enjoy!
