Jambalaya Pasta – Happy Mardi Gras
Ingredients
- 1/2 pound boneless chicken cut into bite size pieces
- 1/2 pound large shrimp, cleaned and deveined
- 1/2 pound andouille or smoked sausage, sliced
- 1 can petite cut tomatoes, about 14.5 ounces
- 1/2 cup diced green peppers
- 3 green onions sliced, white and green separated
- 2 tablespoon Cajun seasoning
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 2 teaspoons Louisiana hot sauce
- salt and pepper to taste
- 8 ounces fideo cut spaghetti, or your favorite pasta, cooked to package directions
Directions
- Mix together the Cajun seasoning and paprika, divide in half and sprinkle and coat half on chicken and half on shrimp, set aside.
- In a large skillet on medium heat add the olive oil, seasoned chicken and stir fry for about 5 minutes.
- Add the sausage, tomatoes, green peppers, white part of onions, garlic powder, hot sauce, stir everything together, cook for about 5 minutes
- Push mixture to one side of the skillet, add 1 tablespoon olive oil and seasoned shrimp, cook on each side of shrimp a couple of minutes.
- Mix everything in skillet all together again, turn burner down to low.
- Add in the cooked pasta and mix, evenly coat with mixture. turn off burner, Serves about 3-4 top with sliced green onions, Enjoy!
