Beef Stew in Slow Cooker

 My version of Beef Stew made in a small slow cooker, enough for 2 or 3 servings…

Beef Stew

Ingredients
  • 8-12 ounces beef in one inch cubes
  • 3 medium potatoes, peeled and cut in thick slices
  • 5 medium to large carrots peeled
  • 1&1/2 cups beef broth, low sodium or unsalted
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • Your favorite herbs examples: Thyme, Bay Leave, Sage, Dill, Paprika, Parsley, sprinkle in…
  • Salt and Pepper to taste

Directions
  • Plug in a small slow cooker, set on high.
  • In a frying pan on medium high heat add tablespoon of olive oil, add the beef cubes. Sprinkle the onion and garlic powder over beef.
  • Sear beef until browned on each side, about five minutes.
  • Add to slow cooker In Layers, carrots first, then the meat, and last the potatoes on top.
  • Add the beef broth, Sprinkle all your herbs evenly on top.
  • Cover with lid and cook for about 4 hours on high. Serve and Enjoy!
