Creamy Spinach and Tuna Fish Lasagna
Ingredients
- 6-8 lasagna noodles, gluten free oven ready or regular oven ready
- 1 can tuna fish, drained, about 4 to 5 ounces
- 10 ounce box frozen spinach, thawed and liquid squeezed out
- 2&1/2 cups milk
- 4 tablespoons butter
- 4 tablespoons flour
- 2 tablespoons olive oil
- 1 teaspoon garlic and herb seasoning, no salt
- 1 teaspoon dried dill
- 1 teaspoon dried basil
- 2 teaspoon dried minced onions
- salt and pepper to taste
- 1/4 cup shredded parmesan cheese
- 3/4 cup shredded cheddar cheese
- green onion tops for garnish
Directions
- In a large skillet add the butter, turn burner on medium, allow butter to melt add flour stir until mixed, keep stirring until light brown. Slowly add milk and stir until thickened.
- Add the tuna fish, salt and pepper, and seasonings, olive oil. Stir until everything is combined and tuna fish is broken up in to smaller pieces. Next stir in spinach until mixed in.
- Take off burner and turn off heat. Add in the parmesan cheese, keep stirring until cheese is mixed in completely. If sauce gets to thick add a little more milk.
- Plug in slow cooker turn on low, spray a medium size (3 to 4 quart) slow cooker with cooking spray.
- Spoon a layer of the tuna cream mixture in bottom of slow cooker, next lay lasagna noodles to fit, cut or break.
- Next layer; spread some sauce on noodles and sprinkle cheddar cheese, then another layer, lasagna noodle, sauce, cheese, repeat layers, should be about 4 layers. End with creamy sauce and cheddar cheese last.
- Cover and cook on low for about 3 hours. Turn crock at about 1&1/2 hours, with pot holders lift and turn, if needed, depends on your slow cookers hot spots.
- Poke a knife through to see if noodles are cooked and feel soft. Add more cooking time if needed.
- Turn off slow cooker. Allow to sit for 15 minutes before cutting and serving.
- Serve with extra parmesan cheese, if you like. Serves about 3-4. Enjoy!
