Meatless Taco Bean Casserole
Ingredients
- 1 can pinto beans, drained and rinsed, 15 ounce
- 1 can diced tomatoes, 15 ounces
- 1 cup crushed tortilla chips
- 1 teaspoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon onion powder
- 1 cup shredded cheddar cheese
- sour cream, lettuce, green onions, chopped onions for garnish if you like
- extra tortilla chips, optional
Directions
- Preheat oven to 350°, spray a baking dish with cooking spray.
- Add the crushed tortilla chips, pinto beans, and tomatoes to baking dish.
- Sprinkle all the seasonings over top and mix to incorporate everything.
- Top with shredded cheddar cheese, cover and Bake in preheated oven for about 30 minutes.
- Serve with Sour Cream, shredded lettuce, green onions, chopped onions if you like.
- Serves about 3. Enjoy!
