Meatless Taco Bean Casserole

Ingredients

  • 1 can pinto beans, drained and rinsed, 15 ounce
  • 1 can diced tomatoes, 15 ounces
  • 1 cup crushed tortilla chips
  • 1 teaspoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • sour cream, lettuce, green onions, chopped onions for garnish if you like
  • extra tortilla chips, optional

Directions

  • Preheat oven to 350°, spray a baking dish with cooking spray.
  • Add the crushed tortilla chips, pinto beans, and tomatoes to baking dish.
  • Sprinkle all the seasonings over top and mix to incorporate everything.
  • Top with shredded cheddar cheese, cover and Bake in preheated oven for about 30 minutes.
  • Serve with Sour Cream, shredded lettuce, green onions, chopped onions if you like.
  • Serves about 3. Enjoy!
