Sweet and Sour Slow Cooker Chicken
Ingredients
- 8 to 12 ounces boneless chicken breast, cut in to bite size pieces
- 1 tablespoon corn starch
- 2 tablespoons olive oil
- salt and pepper to taste
- 2 large carrots, peeled and sliced diagonal
- 3 stalks celery sliced diagonal
- 2 teaspoon paprika
- 2 teaspoon no salt seasoning blend
- 2 teaspoons dried minced onions
- 2 tablespoons low sodium soy sauce
- 2 tablespoons ketchup
- 3 tablespoons brown sugar
- 2 cups chicken broth, low sodium
- 1/2 green pepper sliced with juice
- 8 ounce can pineapple chunks
- 2 tablespoons corn starch mixed with 1/4 cup water, to thicken at the end
- 3 cups cooked rice, kept warm
Directions
- In a bowl add cut up chicken, salt and pepper and corn starch, mix to cover chicken.
- Add olive oil to a skillet, turn burner on medium, add chicken. Stir fry for a few minutes on each side, Turn off heat.
- Turn a small/medium size crock pot on high, add carrots and celery, sprinkle with all the seasonings.
- Mix ketchup, brown sugar, soy sauce, and broth in a bowl stir until brown sugar is dissolved.
- Pour broth mixture over the vegetables in the crock pot, top with chicken.
- Cover and cook for about 2 and half hours, add the green pepper slices and the pineapple and stir. Cook for about another half hour.
- Mix together cornstarch and water in a cup and pour in to the pot, stir, liquid should start to thicken.
- Turn off crock pot and serve sweet and sour chicken over rice. Serves about 3. Enjoy!
