Christmas Brunch Mincemeat Cake

 Here it is, I used the remaining mincemeat, my second mincemeat recipe.  The end result, a really good coffee type cake, it turned out dense and moist. The orange frosting really compliments the mincemeat flavor…




🎄 CHRISTMAS BRUNCH MINCEMEAT CAKE 

2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup quick oats

1/4 cup sugar

1/2 cup oil

1/2 cup milk

1 egg

1 & 1/2 cups mincemeat ( I used None Such in the jar )

Mix the oil, milk, and egg, and sugar, beat together, stir in mincemeat

Add all the dry ingredients, blend really well

Pour into a prepared round or square pan, I like using round ceramic or glass type pans.

Bake at 350° for 45 minutes, check for doneness, when toothpick or knife comes out clean.



🍊 Orange Frosting 🍊

1 cup powdered sugar

3 tablespoons shortening

2 tablespoons orange marmalade

few tablespoons milk as needed

Mix together powdered sugar, shortening, and orange marmalade with mixer on low

Add the milk slowly to desired consistency, mix on medium until blended completely

Spread on cooled cake and enjoy!
