Almond Four – Chocolate Mocha Cake
ALMOND FOUR – CHOCOLATE MOCHA CAKE
1 and 1/2 cups almond flour
1/3 cup unsweetened cocoa
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 cup sugar
3 eggs
1/3 cup oil
1/2 cup strong coffee or 1 tablespoon instant coffee mixed with half cup hot water
Sift together almond flour, cocoa, baking powder, baking soda, and set aside
Whisk eggs together, add sugar, and oil, mix all together completely, stir in coffee
Stir in flour mixture to the wet ingredients, blend all ingredients together
Pour batter into a prepared round or square pan
Bake at 350° degrees for 30-35 minutes or until toothpick or knife comes out clean.
Frost when completely cooled, I used a chocolate buttercream frosting, with a little instant coffee sprinkled in.
