Tuscan Chicken Bacon Spinach Pasta

Ingredients

  • 6 ounces regular or gluten free pasta, penne or spaghetti, cooked to package directions
  • 1 boneless chicken breast cut in strips, cooked completely in a skillet with a tablespoon olive oil and set aside
  • 3 slices cooked bacon, cut in to pieces
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup cherry tomatoes cut in half
  • 1/2 cup cream or half and half
  • 1/2 cup reserved pasta water
  • 1/4 cup shredded parmesan cheese
  • 5 ounces fresh spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil, or fresh if you have
  • salt and pepper to taste

Directions

  • Add olive oil and butter to a large skillet, add tomatoes, garlic powder, and basil cook over medium heat for a few minutes. Season with salt and pepper.
  • Add cream, parmesan, reserved pasta water, let simmer and stir for a few minutes.
  • Add spinach stir in until wilted cook for about 1 minute.
  • Add cooked pasta toss to coat with sauce then add chicken and bacon toss to completely mix everything together.
  • Serves about 2-3. Enjoy!
