Tuscan Chicken Bacon Spinach Pasta
Ingredients
- 6 ounces regular or gluten free pasta, penne or spaghetti, cooked to package directions
- 1 boneless chicken breast cut in strips, cooked completely in a skillet with a tablespoon olive oil and set aside
- 3 slices cooked bacon, cut in to pieces
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup cherry tomatoes cut in half
- 1/2 cup cream or half and half
- 1/2 cup reserved pasta water
- 1/4 cup shredded parmesan cheese
- 5 ounces fresh spinach
- 1 teaspoon garlic powder
- 1 teaspoon dried basil, or fresh if you have
- salt and pepper to taste
Directions
- Add olive oil and butter to a large skillet, add tomatoes, garlic powder, and basil cook over medium heat for a few minutes. Season with salt and pepper.
- Add cream, parmesan, reserved pasta water, let simmer and stir for a few minutes.
- Add spinach stir in until wilted cook for about 1 minute.
- Add cooked pasta toss to coat with sauce then add chicken and bacon toss to completely mix everything together.
- Serves about 2-3. Enjoy!
