Blueberry Cornmeal Waffles
Ingredients
- 1/3 cup gluten free or regular flour
- 1/3 cup self rising cornmeal (not mix)
- dash of cinnamon (optional)
- 1 egg
- 1/3 cup milk
- 1 tablespoon maple syrup or honey
- 3 tablespoons cooking oil
- 1/2 cup blueberries
- In a medium mixing bowl add the egg, milk, cooking oil, honey or maple syrup, mix together with a fork.
- Add the flour, cornmeal, and dash of cinnamon, mix everything together.
- Fold in the blueberries, pour enough batter into your hot waffle iron to make a waffle.
- Top waffles with butter and maple syrup and extra blueberries.
- Makes 5 mini waffles. Serve and Enjoy!
