Ground Chicken Taco Rice Bowl
Ingredients
- 1 pound lean ground chicken
- 1 cup chicken broth
- 2 teaspoons ground cumin, 2 teaspoons paprika, 1 teaspoon chili powder
- 1 teaspoon onion powder, 1 teaspoon garlic powder
- 1 can black beans, drained and rinsed, about 15 ounce
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes, fresh
- 2-3 cups cooked rice, kept warm
- Lettuce cut up or shredded
- salt and pepper to taste

Directions
- Turn burner on medium, in a skillet add the ground chicken and brown until cooked through.
- Mix all the dry spices together in a small bowl, sprinkle evenly over cooked chicken, stir in.
- Add the chicken broth and let cook until liquid has reduced, turn off heat.
- Heat up black beans in microwave, divide and place black beans, rice, chicken, cheese, and tomatoes and lettuce in dinner size bowls, refer to photo.
- Then top with sour cream and garnish with green onions if you like.
- Serves 3-4. Enjoy!
