Broccoli Cauliflower Onion Omelet

Ingredients

  • 2 eggs, beaten with fork in a bowl
  • 1/4 cup mixed cheeses, your choice
  • 1/3 cup broccoli and cauliflower, cooked
  • thin slice of onion
  • salt and pepper to taste
  • pat of butter
  • medium skillet

Directions

  • Turn burner on medium, place a medium skillet on burner and add pat of butter to melt.
  • Pour beaten eggs in skillet and cover bottom of skillet.
  • Turn burner down to low, cook egg until a little firm in the middle.
  • Add the broccoli, cauliflower, onion and 1/2 of the cheese on one half of the egg.
  • With a spatula fold the other half of egg over the vegetables.
  • Let egg cook for about 20 seconds, flip egg over, if needed cook on other side for another 20 seconds. This depends on your preference and desired doneness of your eggs.
  • Serve with the other half cheese on top of omelet and extra veggies on top, if you like, add your favorite breakfast sides. Enjoy!
