Saute Chicken and Green Peppers

Ingredients

  • 1 large boneless skinless chicken breast, about 3/4 pound
  • 1 large green pepper, sliced into large pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon paprika
  • 1 tablespoon umami mushroom seasoning, or your favorite seasoning blend
  • salt and pepper to taste
  • 6 ounces cooked to package directions, regular or gluten free pasta
  • 2 tablespoons butter, to toss with hot pasta
  • 1/3 cup shredded cheese, (more or less), parmesan, cheddar mix, or your favorite cheeses

Directions

  • In a medium skillet add the olive oil and 2 tablespoons butter, turn heat to medium high.
  • Add the cut up chicken and the sliced green pepper, stir to keep evenly heated and cooked.
  • Sprinkle in the seasoning blend and paprika, stir until chicken is completely cooked.
  • Toss the other 2 tablespoons of butter into the hot pasta, covering pasta.
  • Place a serving of the pasta in a dish and top with a serving of the chicken and peppers.
  • Top with shredded cheeses, and serve. Add salt and pepper to taste,  Makes about 2-3 servings. Enjoy!
