Fudgy Oat Flour Cake
Believe it or not… This cake has prunes in it and you wouldn’t know it by taste. I am thinking the prune butter helps give this cake a fudgy texture. I love prune butter in foldover cookies, on toast etc… You basically can use it like apple butter and it is very easy to make, just take dried prunes cover with water and cook on low. Remove from heat and mash them up. If you want a sweeter prune butter add a little sugar while cooking with the water.
Fudgy Oat Flour Cake
1 cup oat flour
1/3 cup baking cocoa
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup sugar
1/4 cup vegetable oil
1/4 cup milk
2 eggs
1/2 cup prune butter (stewed prunes mashed)
1 teaspoon vanilla
Sift together oat flour, cocoa, salt, baking powder, set aside
Cream together eggs and sugar, add prune butter, milk, oil, and vanilla mix
Add dry ingredients mix completely
Pour in to a prepared round or square 8×8 pan
Bake at 350 degrees for about 25 – 28 minutes
Frost, glaze, or dust with powder sugar, your choice… I used a ganache type frosting on mine.

1 can 7.6 ounce Nestle table cream
1/3 cup sugar
1/3 cup baking cocoa
2 tablespoons vegetable oil
