Potato Ham Green Bean Casserole

Ingredients

  • 4 medium to large potatoes, sliced
  • 2 cups cut up ham
  • 12 ounce fresh green beans, cleaned and snapped in half
  • 8 ounces shredded cheddar cheese
  • Cream Sauce (roux)
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 cup milk
  • 1 cup broth, chicken or vegetable, low sodium
  • salt, pepper to taste
  • 1 teaspoon of each: onion powder, garlic powder, smoked paprika, and your favorite seasoning mix

Directions

  • Plug in a medium size slow cooker spray with cooking spray.
  • Layer the potatoes, ham, and green beans in the slow cooker.
  • Next spread half the shredded cheese on top.
  • In a skillet turn heat on medium, add butter to melt then add flour mix together, stir for a few minutes, turn heat down to low, add the broth whisk together until blended, then add the milk whisk until completely blended and thickened.
  • Stir in the spices until all is blended.
  • Turn slow cooker on high.
  • Pour sauce over slow cooker ingredients, evenly spread on top.
  • Cook on high for about 4 hours. Rotate crock after 2 hours if needed, so not to burn on one side. This depends on your slow cooker.
  • Take off lid, spread remaining cheese on top and cook for another half hour to one hour, check potatoes for doneness. Turn slow cooker to warm or off.
  • Top with remaining cheese and allow to melt before serving. Enjoy!
