Cinnamon Roll Cake

Ingredients

  • 2/3 cup regular or gluten free baking mix
  • 1 egg
  • 1/4 cup yogurt
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla flavoring
  • Cinnamon filling ingredients
  • 3 tablespoons light brown sugar
  • 2 tablespoons melted butter
  • 2 tablespoons baking mix
  • 1/2 teaspoon ground cinnamon
  • Your favorite glaze for top after cooled, (just powdered sugar and milk!)

Directions

  • Preheat oven to 350°, spray a 6 inch round baking pan with cooking spray, set aside.
  • In a medium mixing bowl mix together the egg, yogurt, sugar, and vanilla.
  • Add the baking mix and mix with a fork until everything is blended.
  • Pour batter into prepared baking pan, set aside.
  • Mix the filling ingredients together, should form a paste.
  • Arrange the filling paste in a swirl pattern on top of batter in pan, slightly push down into batter with spoon. If you have any left crumble on top.
  • Bake in preheated oven for about 25 minutes. Place cake on cooling rack.
  • After cooled swirl with your favorite glaze in a circle on top. Serve and Enjoy!
