Small Banana Pecan Cake

Ingredients

  • 1 medium banana mashed
  • 1 egg
  • 4 tablespoons melted butter
  • 1/4 cup light brown sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla flavor
  • 3/4 cup gluten free baking mix

Directions

  • Preheat oven to 350°, spray a round 6 ” baking pan with cooking spray, set aside.
  • In a medium mixing bowl add the mashed banana, egg, butter, vanilla, light brown sugar, and milk, whisk everything together briskly until all is completely blended.
  • Add the baking mix and mix completely, beat with a fork for about a minute.
  • Pour into prepared baking pan, spread batter evenly in pan, Bake for about 30-35 minutes or until toothpick entered in center comes out clean.
  • Set on cooling rack to cool, invert on to serving plate, if you like. Drizzle with glaze or frost, if you like. Serve and Enjoy!
