Spinach and Eggplant Meatloaf

 


Spinach and Eggplant Meatloaf

1 pound lean ground beef

1/2 cup thawed and squeezed frozen spinach

1/2 cup finely chopped eggplant

1/3 quick oats

1 egg

3 Tablespoons garlic infused olive oil

1/3 cup shredded mozzarella cheese

salt and pepper to taste

fresh grated romano or parmesan or asiago cheese for on top after you take out of oven

Mix all ingredients together, except fresh grated cheese

put into a sprayed loaf pan

Bake at 350° for 50-60 minutes

Fresh grate cheese on top while hot , cut and serve.
