Gluten Free Blueberry Sour Cream Cake
Ingredients
- 1 cup gluten free baking mix
- 1 egg
- 1/3 cup sour cream
- 1/2 cup milk
- 1/8 cup cooking oil
- 1/2 teaspoon lemon extract
- 1 cup fresh blueberries
- *Make sure to use gluten free ingredients to make it gluten free!
Directions
- In a medium mixing bowl beat together the egg and sour cream with a fork.
- Add the cooking oil, milk, and lemon extract. Mix together.
- Add the baking mix and mix, beat with a fork for about 2 minutes.
- Fold in the fresh blueberries.
- Spray a 7 or 8 inch round pan with cooking spray, I used a 7 inch spring form pan.
- Bake in a preheated 350° oven for about 40-45 minutes, until toothpick inserted in center comes out clean.
- Place on a cooling rack to cool, release out of the pan onto a dish.
- When completely cooled drizzle with your favorite glaze. Serve and Enjoy!
