Zucchini and Parmesan Cheese Omelet
Ingredients
- 2 eggs
- Pinch of onion powder
- 1/4 cup shredded or sliced zucchini
- 1/4 cup shredded parmesan cheese
- 1 pat butter
- salt and pepper to taste
Directions
- In a small bowl beat eggs and onion powder with a fork.
- Turn burner on stove to low/medium in a small skillet, add butter melt.
- Pour eggs in to skilllet, tilt skillet so egg can cover bottom.
- Add shredded zucchini and most of the parmesan cheese, save some for top.
- Lower heat to low if needed.
- When egg is firm, fold in half with a spatula.
- Cook for about a minute, flip over and cook for about a minute on other side.
- Remove from skillet and sprinkle remaining cheese on top.
- Add your favorite breakfast sides. Serve and Enjoy!
