Chocolate Chip Mini Cakes
Ingredients
- 1/2 cup regular or gluten free all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 egg
- 3 tablespoons sugar
- 3 tablespoons sour cream
- 1 tablespoon cooking oil
- 1/2 teaspoon vanilla extract
- 3-4 tablespoons mini chocolate chips
Directions
- Preheat oven to 350°, spray two 4 inch ramekins with cooking spray, set aside.
- In a medium mixing bowl mix together the egg, sugar, sour cream, cooking oil, and vanilla.
- Add the flour, baking powder, and baking soda, mix everything until completely blended.
- Fold in mini chocolate chips, pour batter evenly into the two ramekins.
- Bake in preheated oven for about 25 minutes, until toothpick inserted in the middle comes out clean.
- Remove from oven and set on cooling rack, after completely cooled drizzle with a chocolate or white glaze if you like. Serve and Enjoy!
