Chocolate Chip Mini Cakes

Ingredients

  • 1/2 cup regular or gluten free all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 egg
  • 3 tablespoons sugar
  • 3 tablespoons sour cream
  • 1 tablespoon cooking oil
  • 1/2 teaspoon vanilla extract
  • 3-4 tablespoons mini chocolate chips

Directions

  • Preheat oven to 350°, spray two 4 inch ramekins with cooking spray, set aside.
  • In a medium mixing bowl mix together the egg, sugar, sour cream, cooking oil, and vanilla.
  • Add the flour, baking powder, and baking soda, mix everything until completely blended.
  • Fold in mini chocolate chips, pour batter evenly into the two ramekins.
  • Bake in preheated oven for about 25 minutes, until toothpick inserted in the middle comes out clean.
  • Remove from oven and set on cooling rack, after completely cooled drizzle with a chocolate or white glaze if you like. Serve and Enjoy!
