Banana Pumpkin Cake Bars

Ingredients

  • 1 cup baking mix, regular or gluten free
  • 1 cup 100% pumpkin puree, about half 15 ounce can
  • 1 small ripe banana, mashed
  • 1 egg
  • 1/3 cup cooking oil
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/3 cup chopped walnuts, for top, optional

Directions

  • Preheat oven to 350°, spray a 9×13 rectangle baking dish with cooking spray, set aside.
  • In a medium mixing bowl add egg, mashed banana, and pumpkin puree beat with fork.
  • Add the cooking oil, both sugars, and vanilla, beat everything together until blended.
  • Add the baking mix, pumpkin pie spice, and cinnamon, beat together with fork until everything is completely blended.
  • Pour batter into prepared baking dish, spread evenly, Bake in preheated oven for about 30 minutes, until toothpick entered in center comes out clean.
  • Set on cooling rack, when completely cooled frost with your favorite buttercream frosting.
  • Sprinkle top with chopped walnuts.
  • Cut in to squares. Serve and Enjoy!
