Banana Pumpkin Cake Bars
Ingredients
- 1 cup baking mix, regular or gluten free
- 1 cup 100% pumpkin puree, about half 15 ounce can
- 1 small ripe banana, mashed
- 1 egg
- 1/3 cup cooking oil
- 1/3 cup light brown sugar
- 1/3 cup sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoons pumpkin pie spice
- 1 teaspoon cinnamon
- 1/3 cup chopped walnuts, for top, optional
Directions
- Preheat oven to 350°, spray a 9×13 rectangle baking dish with cooking spray, set aside.
- In a medium mixing bowl add egg, mashed banana, and pumpkin puree beat with fork.
- Add the cooking oil, both sugars, and vanilla, beat everything together until blended.
- Add the baking mix, pumpkin pie spice, and cinnamon, beat together with fork until everything is completely blended.
- Pour batter into prepared baking dish, spread evenly, Bake in preheated oven for about 30 minutes, until toothpick entered in center comes out clean.
- Set on cooling rack, when completely cooled frost with your favorite buttercream frosting.
- Sprinkle top with chopped walnuts.
- Cut in to squares. Serve and Enjoy!
