Oatmeal Chocolate Chip Mini Loaf Cakes
Ingredients
- 1/2 cup regular or gluten free all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 egg
- 1/4 cup light brown sugar
- 1/4 cup milk
- 2 tablespoons cooking oil
- 1/4 cup dry quick oats
- 4 tablespoons chocolate chips
Directions
- Preheat oven to 350°, spray two mini loaf pans with cooking spray, set aside.
- In a medium mixing bowl add the egg, sugar, cooking oil, beat with a fork, add milk, oats, and mix.
- Stir in flour, baking powder, baking soda, beat with a fork until completely blended.
- Pour harder evenly in the mini loaf pans, sprinkle one tablespoon of chocolate chips on top of each mini loaf cake batter.
- Bake in preheated oven for about 25-30 minutes, or until toothpick entered in middle comes out clean.
- Remove from oven set on cooling rack, sprinkle one tablespoon on top of each cake while hot, as soon as the chips melt, spread melted chocolate over the cakes. Let cool, serve. Enjoy!
