Chicken Black Bean Rice Soup

Ingredients

  • 1 cup cooked chicken, bite size
  • 1 cup canned black beans, drained and rinsed
  • 1 cup carrots sliced and steamed, about half frozen bag
  • 2 green onions sliced, green and white separated
  • 3 cup chicken broth
  • 2 teaspoons paprika
  • 1-2 teaspoons ground cumin, depends on your taste
  • 1 cup cooked rice
  • salt and pepper to taste

Directions

  • In a medium to large pot add all the ingredients, except the rice and green part of onions, turn burner on medium.
  • Let simmer for about 15-20 minutes, turn burner to low, add cooked rice, cook until everything is heated through.
  • Serve and top with sliced green onion tops and Enjoy!
