Oatmeal Prune Mini Loaf Cakes

Ingredients

  • 1/2 cup regular or gluten free all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup dry quick oats
  • 1/4 cup milk
  • 1/4 cup sugar
  • 1 egg
  • 8 prunes, cut up
  • 2 tablespoons cooking oil

Directions

  • Preheat oven to 350°, spray two mini loaf pans with cooking spray, set aside.
  • In a medium mixing bowl add the egg, sugar, milk, cooking oil, quick oats, beat everything with a fork.
  • Add the flour, baking powder and baking soda, and prunes, beat everything together with fork until blended.
  • Pour batter evenly in the mini loaf pans, Bake in preheated oven for about 25 minutes, or until toothpick entered in center comes out clean.
  • Set on cooling rack, after cooled drizzle with gaze if you like. Cut, serve and Enjoy!
