Oatmeal Prune Mini Loaf Cakes
Ingredients
- 1/2 cup regular or gluten free all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 cup dry quick oats
- 1/4 cup milk
- 1/4 cup sugar
- 1 egg
- 8 prunes, cut up
- 2 tablespoons cooking oil
Directions
- Preheat oven to 350°, spray two mini loaf pans with cooking spray, set aside.
- In a medium mixing bowl add the egg, sugar, milk, cooking oil, quick oats, beat everything with a fork.
- Add the flour, baking powder and baking soda, and prunes, beat everything together with fork until blended.
- Pour batter evenly in the mini loaf pans, Bake in preheated oven for about 25 minutes, or until toothpick entered in center comes out clean.
- Set on cooling rack, after cooled drizzle with gaze if you like. Cut, serve and Enjoy!
