Chicken Red Beans with Tomatoes over Rice
Ingredients
- 2 cups cut up cooked boneless chicken breast, sauteed in a skillet with olive oil or leftover chicken
- 1 can red beans, drained and rinsed, about 15 ounce can
- 1 can petite diced tomatoes, about 15 ounce can
- 1/4 cup chopped onions
- 1/4 cup chopped green pepper
- 2 teaspoons Cajun seasoning, more if you like
- 1 tablespoon butter
- 1 teaspoon garlic powder
- salt and pepper to taste
- 2 cups cooked rice, kept warm
Directions
- In a medium sauce pot on medium heat, add the canned tomatoes, rinsed and drained red beans, butter, seasonings, onions, and green it, sir and mix.
- Bring to boil and let cook to reduce liquid some, add cut up cooked chicken, turn burner to low, let simmer for 5 minutes. Turn off heat.
- Place cooked rice on plates and top with chicken, red beans, and tomatoes mixture.
- Top with extra diced green pepper if you like. Serves 2-3. Enjoy!
