Roast Beef and Cheddar Omelet

Ingredients

  • 2 eggs, beaten with fork
  • 1/4 cup chopped roast beef
  • 1/4 cup shredded sharp cheddar cheese
  • 2 teaspoons butter
  • salt and pepper to taste


Directions

  • Turn burner on medium, add a pat of butter to melt in skillet, pour in beaten eggs, let spread out flat, cook for a minute and turn over.
  • Top eggs on one half with most of the cheese, and most of the chopped roast beef.
  • Fold over other half of egg on top of the omelet ingredients, Add the remaining roast beef and cheese on top of the folded omelet.
  • Cook until desired doneness that you like, Transfer to a plate. Enjoy!
