Skillet Peach Oatmeal Cobbler
Peaches Ingredients
- 2 peach fruit cups, about 4 ounces each
- 2 tablespoons light brown sugar
- 1/2 teaspoon cinnamon
- 2 teaspoons butter
Batter Ingredients
- 1/3 cup regular or gluten free baking mix
- 1/4 cup dry quick oats
- 1 egg
- 3 tablespoons milk
- 2 tablespoons light brown sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon cooking oil
Directions
- In a mixing bowl add the egg, milk, sugar, and oil mix together with a fork.
- Add the baking mix and quick oats mix to make a batter, should be a little thicker than pancake batter, not thin. Set aside.
- Spray an 8 inch skillet with cooking spray.
- Set the skillet on burner turn heat on medium; add the peaches, sugar, cinnamon, and butter, stir to mix.
- Turn burner down to low medium and let simmer for about 10 minutes.
- Next pour batter slowly over peaches evenly, allow to cook for about 5 minutes.
- Top with a lid or foil and allow to cook for about 10-15 more minutes, until the batter turns firm and cooked through. Test with a fork or knife to see if batter is cooked.
- Turn off burner. Take skillet off burner allow to sit about 5 minutes, next turn skillet/cobbler over in to a serving bowl, so peaches are now on top. Scrape any peaches left in the pan and spread evenly over cobbler.
- Serve warm in dessert dishes with whip cream topping or ice cream. Serves 2. Enjoy!
