Ground Seasoned Chicken Patty Bowl

Ingredients

  • 1 pound lean ground chicken
  • 3 cups cooked rice, kept warm, mix in tablespoon butter
  • 2 cups zucchini, cut up in to bite size pieces
  • 8 ounces fresh mushrooms sliced
  • 1/2 cup sliced onions, optional
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 teaspoons garlic powder
  • umami mushroom seasoning blend or your favorite blend
  • salt and pepper to taste

Directions

  • In a skillet on medium heat, add olive oil, butter, zucchini, mushrooms, and onions, stir fry until tender, turn off heat.
  • While vegetables are cooking, Place another large skillet on medium heat, add olive oil and butter.
  • Divide ground chicken into 3 even patties, add to skillet and flatten with spatula to very thin.
  • Sprinkle seasoning blend, salt, and pepper on each side of patty.
  • Cook chicken patties a few minutes on each side, until completely cooked.
  • Place chicken patty in a large dinner bowl, top with vegetables, and make a ring around bowl with the rice, add salt and pepper to taste. Makes 3 large servings. Enjoy!
  • Ideas: taste great when you mix the vegetables and rice together, serve with your favorite dipping sauce for chicken patty. Your choice!
