Easy Taco Salad
Ingredients
- 1 pound lean ground chicken or ground beef, browned and drain fat if needed
- 1 can diced tomatoes, about 15 ounces
- 1/4 cup chopped onions
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- (Taco season mix instead of the seasonings can be used)
- Your favorite lettuce or salad mix, about 10-12 ounces
- 8 ounce bag of triple cheddar cheese, or your favorite
- Tortillas, chips, sour cream, guacamole, your favorite garnish
- salt and pepper to taste
Directions
- In a skillet on medium heat, add chopped onions, brown and drain fat from meat, add all the spices, and tomatoes.
- Allow to cook on medium a few minutes, to make sure meat is completely cooked and liquid from the tomatoes has reduced a little. Turn off heat.
- Placed desired amount of lettuce in dinner bowls, top with some of the meat mixture, next shredded cheese, and any other toppings you desire.
- Serve with your favorite tortilla chips, tortillas.
- Enough for 2-4 taco salads. Depends on the size you make. Enjoy!
