Blueberry Upside Down Dessert

Ingredients

  • 1/2 cup regular or gluten free baking mix
  • 1 egg
  • 3 tablespoons sugar
  • 1/4 cup yogurt
  • 1/2 teaspoon vanilla flavor
  • Blueberry Mix
  • 1/2 cup fresh blueberries
  • 2 tablespoons butter
  • 2 tablespoons light brown sugar

Directions

  • Preheat oven to 350°, spray a small round baking pan, about 6 inches, with baking spray, set aside.
  • In a medium mixing bowl add the egg, yogurt, sugar, and vanilla, mix together.
  • Add the baking mix and blend everything together, set aside.
  • Melt butter and brown sugar together, pour in to the prepared baking pan, spread blueberry evenly on bottom of pan.
  • Slowly spread batter on top of the blueberry mix. Bake in the preheated oven for about 25 minutes, until toothpick entered in center of just the cake comes out clean.
  • Set on cooling rack, let cool, then set a plate on top of cake and turn over onto plate, showing blueberries on top. Cut and serve with ice cream. Enjoy!
