Shrimp and Sweet Red Peppers
INGREDIENTS
- 1/2 pound shrimp peeled and deveined
- 1 large Sweet red bell pepper, sliced in strips
- 1 large white onion, sliced in wide strips
- 2 teaspoons garlic and herb no salt seasoning
- 3/4 cup orange juice
- 2 tablespoons low sodium soy sauce
- 1 tablespoon corn starch
- Olive oil for cooking
- 1 tablespoon butter
- red pepper flakes for heat, if you like
- salt and pepper to taste
- 2 cups cooked rice, keep warm.
DIRECTIONS
- Coat shrimp with cornstarch, set aside.
- In a large skillet add a few tablespoons of olive oil, turn heat on medium, add the prepared shrimp to oil and cook for about 4 minutes, toss while cooking. Transfer shrimp to a plate, set aside.
- In the skillet add the onion and red peppers, add butter and more oil if needed. Add the garlic and herb seasoning, toss vegetables until they are tender, about 5 minutes.
- Add the prepared shrimp to skillet.
- Mix in the orange juice and soy sauce, keep stirring, the sauce with start to thicken. Turn heat to low, cook about 5 minutes more while stirring. Turn off heat.
- Serve over rice, add sprinkle with red pepper flakes, if you want heat.
- Serves 2 . Enjoy!
