Happy Saint Patrick’s Day
Ingredients
- 1/2 cup gluten free or regular baking mix
- 1 egg
- 1/4 cup plain yogurt
- 1/4 cup sugar
- 2 tablespoons cooking oil
- 1/2 teaspoon vanilla extract
- Frosting, your favorite
- Green decorations, sprinkles, candies, colored sugar…
- Preheat oven to 350°, spray cupcake pan with cooking spray set aside.
- In a mixing bowl add egg slightly beat with a fork, add yogurt, sugar, cooking oil, vanilla, stir to mix.
- Add baking mix and stir until everything is completely mixed.
- Pour into prepared cupcake tin, makes 4.
- Bake in preheated oven for 13 to 15 minutes, until toothpick entered in the middle comes out clean.
- Transfer to cooling rack, allow to cool completely before adding frosting.
- Frost and decorate with green sprinkles, candies or green sugars, what ever you have in the pantry.
