Happy Saint Patrick’s Day

Ingredients

  • 1/2 cup gluten free or regular baking mix
  • 1 egg
  • 1/4 cup plain yogurt
  • 1/4 cup sugar
  • 2 tablespoons cooking oil
  • 1/2 teaspoon vanilla extract
  • Frosting, your favorite
  • Green decorations, sprinkles, candies, colored sugar…

Directions
  • Preheat oven to 350°, spray cupcake pan with cooking spray set aside.
  • In a mixing bowl add egg slightly beat with a fork, add yogurt, sugar, cooking oil, vanilla, stir to mix.
  • Add baking mix and stir until everything is completely mixed.
  • Pour into prepared cupcake tin, makes 4.
  • Bake in preheated oven for 13 to 15 minutes, until toothpick entered in the middle comes out clean.
  • Transfer to cooling rack, allow to cool completely before adding frosting.
  • Frost and decorate with green sprinkles, candies or green sugars, what ever you have in the pantry.
