Happy New Year Sauerkraut & Pork
Sauerkraut and pork at midnight and New Years Day for luck? Yep every year since I was a child!
If you think the sauerkraut is too sour, rinse before putting in the crock pot/slow cooker, add about a cup of water to replace liquid from sauerkraut.
Sauerkraut & Pork
1 pound pork (I used boneless country ribs)
2 pounds sauerkraut (bag or cans)
1 apple grated
1 small onion diced
Onion powder
Garlic powder
Black pepper
Parsley
Caraway seed (optional)
Olive oil

In a frying pan put some olive oil, heat on medium, place pork pieces in frying pan to brown and sprinkle with onion powder, garlic powder, black pepper, & parsley. After browning one side flip to other side and sprinkle with spices. Flip a couple more times, to brown nicely on both sides. See pictures.
In crock pot/slow cooker mix grated apple and diced onion with sauerkraut, sprinkle onion powder, garlic powder, parsley seasonings to taste, about one teaspoon each.
If you like caraway seed sprinkle some in to taste also. Some sauerkrauts have caraway seeds in them, usually called Bavarian sauerkraut.
Black pepper to taste...
Place pork pieces on top of sauerkraut
Cook on high for about 4 hours in crock pot/slow cooker
Serve with mashed potatoes and rye bread or dinner rolls, enjoy.
