Ground Chicken Parmesan Patties over Pasta

Ingredients

  • 1 pound lean ground chicken
  • 1 egg
  • 1/4 cup bread crumbs or quick oats
  • 1/4 cup shredded parmesan cheese, plus extra when serving
  • 1/3 cup chopped onions
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoon olive oil
  • salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried basil
  • 6-8 ounces of your favorite pasta cooked to package directions
  • 1 jar of your favorite spaghetti sauce, about 24 ounce jar

Directions

  • In a 8-9 inch round or square baking dish spray with cooking spray, spread half of the sauce on the bottom.
  • Add the pasta on top of the sauce, set aside.
  • In a mixing bowl add the ground chicken, egg, Italian seasoning, 1 tablespoon olive oil, garlic powder, chopped onions, salt and pepper to taste.
  • Mix everything together completely, until all is incorporated evenly.
  • Make 4 equal size patties, turn on skillet to medium high, add about 1 tablespoon or more of olive oil.
  • Place patties in skillet and fry like a hamburger until completely cooked, 165° meat thermometer.
  • Remove from heat, place patties on top of pasta in baking dish, pour the other half of sauce on top of cooked patties.
  • Spread the shredded mozzarella evenly on top, sprinkle top with the dried basil.
  • Bake in preheated 375° oven for about 20 minutes until cheese is melted and lightly golden browned on top.
  • Set on serving rack. Serves 4. Enjoy!
