Almond Flour Chocolate Coconut Cake

My new version of coconut cake, add chocolate.  Sounds good to me...



Almond Flour Chocolate Coconut Cake

1 cup almond flour

1/3 cup baking cocoa

1 teaspoon baking soda

1 teaspoon baking powder

3 eggs

1/2 cup sugar

1/3 cup oil

1 teaspoon vanilla

1/2 cup unsweetened coconut

Sift all dry ingredients together, set aside

Combine eggs, sugar, oil, and vanilla, beat with whisk

Add the dry ingredients and whisk until mixed

Fold in the coconut

Pour into a prepared round or 8 inch square pan

Bake at 350 degrees for 25-30 minutes, insert toothpick or knife if it comes out clean it is done.

I frosted with a chocolate buttercream frosting and sprinkled coconut on top.
