Apple Fritters Mini Cakes
Ingredients
- 1/2 cup regular or gluten free baking mix
- 1/4 teaspoon cinnamon
- 1 egg
- 2 tablespoons milk
- 2 tablespoons cooking oil
- 2 tablespoons light brown sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup apple pie filling, cut up in to smaller pieces
- 2 teaspoons of the apple glaze from the filling in the can
- your favorite white glaze recipe (powdered sugar & milk) to cover fritter cakes
Directions
- Wipe inside of bundt maker with cooking oil or spray. Plug in mini bundt maker to heat up.
- Place the half cup of the apple pie filling on a dish and cut apples in to smaller pieces, set aside.
- In a medium mixing bowl add the egg, sugar, cooking oil, and vanilla extract, beat together with a fork.
- Add the baking mix and cinnamon, stir until mixed in and then beat with fork.
- Fold in the cut up apple pie filling in to the batter.
- Pour half of the batter into mini bundt maker, top batter with a spoonful of the apple glaze from the can, Swirl lightly in to the batter.
- Close lid and bake for about 8 minutes, until toothpick entered in cake comes out clean.
- With pot holders lift out cake by the plate handles, set on cooling rack. Repeat with remaining batter. Makes 2 cakes.
- Cover both fritters with your favorite glaze and serve. Enjoy!
