Pumpkin Bread
I decided to make a pumpkin loaf with the remainder of the can of pumpkin I opened to make pumpkin bars the other day…
PUMPKIN BREAD
1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
2 eggs
1/4 cup oil
3/4 cup 100% canned pumpkin
1/3 cup light brown sugar
1 teaspoon vanilla
Sift together flour, baking powder, baking soda, pumpkin pie spice, set aside
Beat eggs together with a whisk, add oil, vanilla, light brown sugar, and pumpkin whisk completely together
Add wet ingredients into dry ingredients, whisk to blend all ingredients together
Pour batter into prepared loaf pan
Bake at 350 degrees for 40-45 minutes, until a toothpick or knife inserted comes out clean.
