Banana Cream Cheese Swirl Cake

Ingredients

  • 2/3 cup regular or gluten free flour
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 large mashed banana
  • 1 egg slightly beaten with a fork
  • 1/4 cup sugar
  • 1/3 cup milk
  • 1/4 cup cooking oil
  • Cream Cheese Filling Ingredients
  • 4 ounces cream cheese at room temperature
  • 2 tablespoons sugar
  • 1 egg
  • 2 tablespoons regular or gluten free flour

Directions

  • Preheat oven 350° and Spray a 7 inch round cake pan with cooking spray.
  • In a medium mixing bowl add one egg and mashed banana, and sugar mix together with a fork.
  • Mix in the oil and milk, fold in the flour, salt, and baking soda, mix with a fork until blended
  • Add batter to prepared baking pan set aside.
  • Cream Cheese Filling Directions
  • In a small mixing bowl cream together the cream cheese and sugar.
  • Beat in one egg with a fork, Mix in the 2 tablespoons flour, blend all together.
  • Pour cream cheese mixture on top of the batter in cake pan, swirl around with a butter knife.
  • Bake in a preheated 350° oven for about 45-50 minutes, (insert knife or toothpick in center and it comes out clean).
  • Place on cooling rack to cool. Top with your favorite frosting or glaze if you like.
