Cherry Almond Coffee Cake
Ingredients
- Preheat the oven to 350° and prepare a 7 inch round baking pan spray with cooking spray.
- 2/3 cup regular or gluten free baking mix
- 1 egg slightly beaten with a fork
- 1/3 cup sugar
- 1/4 cup cooking oil
- 1/2 cup milk
- 1/2 teaspoon almond extract
- 2 tablespoons maraschino cherry juice
- 1/3 cup quartered maraschino cherry juice
- 1/3 frozen dark cherries thawed and cut in quarters
Directions
- Mix together the egg, sugar, cooking oil, milk, almond extract, and cherry juice.
- Add the baking mix and beat everything together with a fork for about 2 minutes.
- Fold in cherries, pour batter into a 7 inch round baking pan sprayed with cooking spray.
- Bake in a preheated 350° oven for about 45 minutes.
- Place on cooling rack to cool and drizzle with your favorite glaze.
