Cherry Almond Coffee Cake

Ingredients

  • Preheat the oven to 350° and prepare a 7 inch round baking pan spray with cooking spray.
  • 2/3 cup regular or gluten free baking mix
  • 1 egg slightly beaten with a fork
  • 1/3 cup sugar
  • 1/4 cup cooking oil
  • 1/2 cup milk
  • 1/2 teaspoon almond extract
  • 2 tablespoons maraschino cherry juice
  • 1/3 cup quartered maraschino cherry juice
  • 1/3 frozen dark cherries thawed and cut in quarters

Directions

  • Mix together the egg, sugar, cooking oil, milk, almond extract, and cherry juice.
  • Add the baking mix and beat everything together with a fork for about 2 minutes.
  • Fold in cherries, pour batter into a 7 inch round baking pan sprayed with cooking spray.
  • Bake in a preheated 350° oven for about 45 minutes.
  • Place on cooling rack to cool and drizzle with your favorite glaze.
