Cranberry Banana Loaf Cake
Ingredients
- 1 cup gluten free or regular all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 small/medium ripe banana, mashed
- 1/3 cup sugar
- 2 eggs
- 1/4 cup milk
- 1/4 cup cooking oil
- 1 teaspoon vanilla
- 1/3 cup dried cranberries, (craisins)
Directions
- Preheat oven to 375°, spray a 5×9 loaf pan with cooking spray set aside.
- In a medium mixing bowl, add mashed banana, sugar, eggs, vanilla, oil, and milk, mix completely.
- Add the flour, baking powder, baking soda, beat everything together with a fork for about 2 minutes.
- Stir in the dried cranberries, pour batter into the prepared loaf pan.
- Bake in preheated oven for 30-35 minutes, or until toothpick entered in center comes out clean.
- Set on cooling rack, remove from pan if you like. Drizzle with a glaze if you like.
