Shrimp and Sweet Peppers

Ingredients

  • 1/2 pound peeled and deveined shrimp
  • 3 sweet peppers, (red yellow green), cut into strips
  • 1 tablespoon low sodium soy sauce
  • 1/3 cup orange pineapple juice, or just orange juice
  • 1 teaspoon corn starch, if needed for thickening
  • 1 medium onion sliced
  • 3 tablespoons olive oil
  • salt and pepper to taste

Directions

  • In a large skillet on medium high heat, add olive oil and saute shrimp until pink, a couple of minutes, take out shrimp and set aside.
  • Add sliced peppers and onion to skillet, stir fry for about 5 minutes.
  • Add juice and soy sauce, bring to a boil, add shrimp, turn heat down, sprinkle and stir in corn starch if needed to thicken.
  • Turn off heat and serve with your favorite rice. Serves 2. Enjoy!
