Shrimp and Sweet Peppers
Ingredients
- 1/2 pound peeled and deveined shrimp
- 3 sweet peppers, (red yellow green), cut into strips
- 1 tablespoon low sodium soy sauce
- 1/3 cup orange pineapple juice, or just orange juice
- 1 teaspoon corn starch, if needed for thickening
- 1 medium onion sliced
- 3 tablespoons olive oil
- salt and pepper to taste
Directions
- In a large skillet on medium high heat, add olive oil and saute shrimp until pink, a couple of minutes, take out shrimp and set aside.
- Add sliced peppers and onion to skillet, stir fry for about 5 minutes.
- Add juice and soy sauce, bring to a boil, add shrimp, turn heat down, sprinkle and stir in corn starch if needed to thicken.
- Turn off heat and serve with your favorite rice. Serves 2. Enjoy!
