Corn Cakes for Two

Ingredients

  • 1/2 cup self rising cornmeal, (not mix)
  • 1 egg, slightly beaten with fork
  • 1/4 cup milk
  • 1 tablespoon cooking oil
  • 1 tablespoon sugar

Directions

  • Preheat oven to 400°, spray two 4 inch ramekins with cooking spray, set aside.
  • Beat everything together in a medium mixing bowl until blended.
  • Pour batter into prepared ramekins, Bake for 20-25 minutes.
  • Set on cooling rack, serve hot with your favorite chili, stew, or soups. Don’t forget the butter. Enjoy!
