Corn Cakes for Two
Ingredients
- 1/2 cup self rising cornmeal, (not mix)
- 1 egg, slightly beaten with fork
- 1/4 cup milk
- 1 tablespoon cooking oil
- 1 tablespoon sugar
Directions
- Preheat oven to 400°, spray two 4 inch ramekins with cooking spray, set aside.
- Beat everything together in a medium mixing bowl until blended.
- Pour batter into prepared ramekins, Bake for 20-25 minutes.
- Set on cooling rack, serve hot with your favorite chili, stew, or soups. Don’t forget the butter. Enjoy!
