Small Peach Coffee Cake

Ingredients

  • 1/2 cup regular or gluten free baking mix
  • 1 egg
  • 1/4 cup sugar
  • 1/4 cup yogurt
  • 1/2 teaspoon vanilla flavor
  • 1/4 cup chopped peaches, (small peach)
  • For sprinkle on top mix together
  • 1 tablespoon brown sugar
  • 2 tablespoons baking mix
  • small pinch cinnamon

Directions
  • Preheat oven to 350°, spray a small round baking pan, about 6 inches, with baking spray, set aside.
  • In a medium mixing bowl add the egg, yogurt, sugar, and vanilla, mix together.
  • Add the baking mix blend everything together.
  • Fold in the chopped peaches, pour batter into prepared baking pan.
  • Mix topping ingredients together and sprinkle evenly on top of batter. Swirl with knife lightly into batter.
  • Bake in preheated oven for about 25 minutes, until a toothpick entered in center comes out clean.
  • Set on cooling rack, remove from pan and place on a serving plate. Drizzle with glaze if you like. Serve and Enjoy!
