Small Peach Coffee Cake
Ingredients
- 1/2 cup regular or gluten free baking mix
- 1 egg
- 1/4 cup sugar
- 1/4 cup yogurt
- 1/2 teaspoon vanilla flavor
- 1/4 cup chopped peaches, (small peach)
- For sprinkle on top mix together
- 1 tablespoon brown sugar
- 2 tablespoons baking mix
- small pinch cinnamon
- Preheat oven to 350°, spray a small round baking pan, about 6 inches, with baking spray, set aside.
- In a medium mixing bowl add the egg, yogurt, sugar, and vanilla, mix together.
- Add the baking mix blend everything together.
- Fold in the chopped peaches, pour batter into prepared baking pan.
- Mix topping ingredients together and sprinkle evenly on top of batter. Swirl with knife lightly into batter.
- Bake in preheated oven for about 25 minutes, until a toothpick entered in center comes out clean.
- Set on cooling rack, remove from pan and place on a serving plate. Drizzle with glaze if you like. Serve and Enjoy!
