Almond Chocolate and Coconut Cake
Ingredients
- 2/3 cup regular or gluten free flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 egg
- 1/4 cup cooking oil
- 1/2 cup sugar
- 1/3 cup milk
- 1/2 teaspoon almond extract
- 1/4 cup coconut
- 1/4 cup mini chocolate chips
- Slivered almonds for top
- Chocolate syrup for top
- Your favorite butter cream frosting
Directions
- Preheat oven to 350°, spray a 7 or 8 inch round cake pan with cooking spray set aside.
- In a medium mixing bowl mix egg, cooking oil, almond extract, sugar and milk.
- Add flour, baking soda, coconut, and baking powder, mix everything together until blended.
- Sprinkle mini chocolate chips on top evenly. Pour batter in to the prepared baking pan,
- Bake for about 25 minutes or until toothpick entered in center comes out clean.
- Set on cooling rack, frost when completely cooled, sprinkle almonds, extra coconut, on top drizzle with chocolate syrup.
