Chicken Meatballs with Sauce over Pasta

Meatballs

  • 1 pound lean ground chicken
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon dried parsley
  • 1/2 teaspoon Italian seasoning
  • 1/3 cup dry breadcrumbs or quick oats
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • Directions
  • Mix all ingredients, except olive oil, in a mixing bowl and roll into 2 inch balls, make about 10-12 meatballs.
    Add olive oil into a skillet on medium heat, place meatballs in skillet to cook and brown on all sides, about 6-8 minutes.

Sauce and Pasta

  • 1 – 24 ounce jar of pasta sauce
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 8-12 ounces of your favorite pasta, regular or gluten free, cooked to package directions.
  • Directions
  • On medium heat, In a large saucepan add all sauce ingredients.
    Now add all the meatballs, turn heat down to low and cook for about 40 minutes, stir frequently.
  • Serve sauce and meatballs over your favorite cooked pasta.
    Add some grated cheese on top. Enjoy!
