Chicken Lasagna – Gluten Free

  • 1 pound lean ground chicken, browned
  • 1 – 28 can diced tomatoes
  • 1 – 15 ounce can tomato sauce
  • 4 tablespoons tomato paste
  • 1 cup water
  • 3 tablespoons olive oil
  • 2 teaspoons basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/2 cup chopped onions, optional
  • 1 – 10 ounce box gluten free oven ready lasagna
  • 1 cup ricotta or cottage cheese
  • 1 – 8 ounce bag shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese, extra to sprinkle on top when serving
  • salt and fresh cracked pepper to taste

Add in a pot the diced tomatoes, tomato sauce, tomato paste, olive oil, and water, stir to blend.

Stir in all the seasoning and chopped onions.

Stir in browned ground chicken.

Let simmer on low for about 2 hours, stir occasionally, or cook in slow cooker for about 4 hours.

Spray a 9×13 baking dish or pan wth non stick cooking spray.

Spoon about a cup of sauce in the bottom of a baking dish.

Place four lasagna sheets across pan on sauce, sprinkle with 1/4 of all the cheeses.

Repeat for 3 more layers ending with sauce and cheeses on top.

Cover with foil, Bake @ 350° for about 40 minutes, uncover and bake about 10 minutes more.

Remove from oven and let sit for about 10 minutes before serving.

Sprinkle with parmesan cheese, if you like and serve.
