Quinoa Flour – Almond Loaf Cake with Lemon Cream Glaze


Quinoa Flour – Almond Loaf Cake

  • 1 cup quinoa flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1/4 cup cooking oil
  • 1/2 cup milk
  • 1/2 can solo almond cake and pastry filling
  • 1/3 cup sliced toasted almonds

In a medium mixing bowl add eggs, oil, milk, and almond filling, beat together with a fork.

Add quinoa flour, baking soda, baking powder, mix in and blend together.

Stir in almonds, save a little for top of batter.

Pour batter into a sprayed prepared loaf pan.

Top batter with remaining almonds.

Bake in a pre-heated oven @ 350° for 45-50 minutes.

Allow to cool and top with lemon cream glaze, optional.

(I did not add sugar to this recipe, because the almond filling is being mixed into the batter and has plenty of sugar in its ingredients).



Lemon Cream Glaze

1/2 cup powdered sugar

2 teaspoons lemon juice

1 tablespoon cream

Mix all ingredients together and pour glaze over loaf.

(If it looks to thin add a little more powdered sugar).


Quinoa flour has a strong aroma, to me it smells earthy, and taste earthy. Some say its aroma gives off a grass like smell and taste a little bitter.

I found when using quinoa flour its best to use ingredients that can compliment the earthy taste. Ingredients like cinnamon, bananas, maple syrup, bacon, oatmeal, chocolate, pumpkin, pecans, and walnuts are the ingredients I have used with good results.
