Quinoa Flour and Gluten Free Flour Banana Walnut Bread, made with Maple Syrup instead of Sugar.
Quinoa Flour Banana Walnut Bread
- 2/3 cup quinoa flour
- 1/3 gluten free flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 eggs
- 1 large ripe mashed banana
- 1/4 cup maple syrup
- 1/3 cup milk
- 1/4 cup cooking oil
- 3/4 cup chopped walnuts
In a medium mixing bowl mix together mashed banana, eggs, oil, milk, maple syrup, and blend completely.
Mix in quinoa flour, gluten free flour, baking powder, baking soda, and cinnamon.
Stir in chopped walnuts, saving some to sprinkle on top before putting in oven.
Pour into a, sprayed with cooking spray, 9×5 loaf pan, sprinkle remaining walnuts on top of batter.
Bake @ 350° for about 40 minutes.
